WINEMAKING AND AGEING :
Manual harvest. Sorting and putting into vats of the raisined and crushed grapes. Separate vinification of the different grape varieties. Maceration (20 days) and alcoholic and malolactic fermentation in coated concrete vats. Rigorous selection and final marriage of reserve wines - 30 to 40% (aged in 100-year-old oak foudres, for some 5 years) in order to obtain a Châteauneuf-du-Pape with a constant style, with a certain maturity and roundness. 15 to 20 wines make up the symphony of La Fiole du Pape.
TASTING NOTES :
Dress – Deep and shiny ruby.
Nose – Fruity and spicy notes evolving into aromas reminiscent of ripe fruits, spirits cherries, spices, truffles.
Palate – Elegant and well balanced, fleshy, powerful, with persistent aromas offering great tasting pleasure: fruits (currant, strawberry jam), sweet spices (pepper, cloves) ...
FOOD AND WINE AGREEMENTS :

To be enjoyed with beef tartare and its small vegetables, wild boar in sauce, moussaka, blue cheese platter, chocolate melting and cherry coulis.
